Please see the user manual (chapter 8.9) about internal RAID reconstruction in WinHex (with a Specialist license) and X-Ways Forensics, or the same page in the program help.

What methodology do you use to determinate Stripe, offset, disk order... and the rest of the parameters to reassembly correctly a Raid array?

If there is an NTFS 3.1 file system in a partition on the RAID system, search for FILE records. Based on how you find logically subsequent FILE records are spread across the RAID component disks, you can deduce these parameters.
