Does using Evidor flip the last accessed date? If certain terms indicate a degree of guilt either criminal or civil, would we have changed the dates by utilizing Evidor? After using Evidor we may decide to make a forensic copy for examination purposes and we would have to explain the dates.

No, Evidor itself does not alter any timestamps. It only reads sectors and does not open files.
